Jak uvařit arabskou kávu
Do džezvy nasypeme semletou kávu a cukr a vše zalijeme vlažnou vodou. Džezvu postavíme na plotýnku a obsah přivedeme k varu. Jakmile se obsah začne vařit (opravdu úplně), džezvu odstavíme a počkáme, až se obsah uklidní, poté jí postavíme zpět na plotýnku a opět necháme přivést k varu. Celý proces ještě dvakrát zopakujeme (takže vše bude třikrát převařeno). Zrníčka kávy se pak budou držet u dna, takže není třeba nic filtrovat a z džezvy můžeme kávu rovnou nalévat do šálků. Obvykle se pije bez mléka, ale záleží na každém, jakou formu preferuje.
Arabská káva je všeobecně asi jedna z nejsilnějších co se obsahu kofeinu týče. Přestože je silnější, je její chuť kultivovanější než u "českého turka", ale samozřejmě jde opět o individuální záležitost vkusu a chuti.
Pravá arabská káva je vě většině případů připravována s cukrem a kořením. Z dostupných pro středoevropana se používá skořice, vanilka a kardamom.Káva bez těchto uvedených ingrediencí, včetně cukru, se pije jen při smutečních hostinách. Do džezvy dáme kávu s kořením a cukr v poměru cca 3/1, zalijeme studenou vodou (jen ve výjimečných případech mírně předehřátou), postavíme na tepelný zdroj a čekáme kdy káva poprvé vzkypí. Když obsah díky pomalému ohřevu uzavře zúženou část, dochází k nejdůležitější fázi přípravy, pomalé propařování. Jakmile káva vzkypí tak že už by z džezvy přetekla, odstavíme ji na asi půl minuty a celý proces opakujem dle chuti a potřeby. V žádném případě nápoj nepřivedem k varu, káva připravená touto cestou zdaleka nedosahuje chuťových kvalit které sebou už jako surovina nese. S vařící vodou se připravuje pouze a výlučně, pravý český turek. Díky velmi jemnému mletí které je pro tento způsob nutné, drží se sedlina na dně džezvy a my můžem kávu pohodlně servírovat bez plovoucích zrnek na hladině. Nápoj je také díky tomu daleko vydatnější, silnější co do obsahu kofeinu a podává se bez mléka, jen se sklenicí vody.
